If you have leftover mashed potatoes in your home you can make these simple fried potato patties.

Do you often have leftover mashed potatoes?  We do.  It’s hard to know in advance how much mashed potatoes everyone is going to eat at a meal.  Sometimes they are in the mood for a lot of potatoes, and sometimes they only want a little.  Go figure…

It really doesn’t matter to us though, because if we have any leftover potatoes we have two standby recipes that we love.  Our favorite is Fried Potato Patties.  They are always delicious.  Our second favorite is Meat Potato Pie.  I’ll be sure to share that recipe in a future post.

Both recipes are loved at our home.  So, I can’t go wrong no matter which one I choose too make.

The nice thing about the Fried Potato Patties is that they work well as a breakfast or dinner side.  Although I don’t make a lot of fried foods, this simple and tasty side dish is an exception to that rule.

Our family really loves them so I thought it would be a great recipe to share with you today.

As with all the recipes I share, this one is super simple and it doesn’t take long at all to make these potato patties.

If you love non-stick skillets like I do. This is my favorite one. If you prefer a cast iron skillet, you will find my recommendation below the recipe.

I love a really good skillet. For our potato patties we prefer to use a non-stick skillet like this one. It is one of my favorites!

Fried Potato Patties

2 ½ cups leftover mashed potatoes

¼ cup all purpose flour

1 egg

½ cup shredded mild cheddar cheese

Salt and pepper to taste

3 T. cooking oil

Heat the oil in a skillet (see some of my favorites below) on the stovetop.  While it is heating, mix together the potatoes and flour.  Mix in the egg.

Finally, mix in the cheddar cheese, salt and pepper.

Once everything is mixed together, form into small patties about 3” in diameter.

Fry them in the oil over low to medium heat.  Turn them over after about 3 minutes.  If they aren’t as brown as you want them, you can turn them back over after another 2-3 minutes and let them brown a little more on both sides.

You can fry them just until they are brown, but our family prefers for them to be fried just a little longer so that they are crispier.

In order to get a little of the extra oil off the patties, place them on a paper towel as you remove them from the pan.  Don’t leave them on the paper towel for long though because they may stick as they start to cool.

These are ready to serve and oh so yummy just as they are.

We like them plain, but you can also serve them with a side of ketchup.
