Peanut Butter Snack Bites

Who can resist an awesome no-bake snack?  These little no bake peanut butter snack bites are super good and super easy to make.

We love sweets, but we are trying to eat healthier.  So, I am constantly searching out snack and dessert recipes that are not super high in calories.

These peanut butter bites definitely fit the bill.  The ingredients list reads fairly healthy.  They are definitely less calorie dense than our usual snacks.

The best news is that they taste great!

The ingredient list is full of items that are typically on hand in our house.  All I had to prepare were the graham cracker crumbs.

I had graham crackers on hand, so I just broke a few in half, put them in a sandwich bag and rolled them with a rolling pin till they were crumbs.  That took less than a minute.  I hope I’m not the only person who still owns a rolling pin.  I’ve had mine forever and I love it.  I use it for crushing things (like nuts and graham crackers) all the time.  If you don’t own one you can just crush the graham crackers with the palm of your hand or the back of a spoon.

I made these with a small marshmallow on the inside, but I prefer them without.  However, children love the “surprise” of finding the marshmallow in the middle.

Peanut Butter Snack Bites

Yield:  24

1 cup quick cooking oats

1/2 cup peanut butter

1/2 cup graham cracker crumbs

1/3 cup honey

1/3 cup mini chocolate chips

Steps:

Combine these 5 ingredients.

Chill for 30 minutes.

Shape the dough into 1″ balls.  If you’d like, you can wrap the balls around a miniature marshmallow.  This makes for a fun surprise inside.

No cooking necessary.  These snack bites are ready to eat.

Both my husband and I loved these for a quick snack between meals.  The trick is making sure that we don’t eat too many.  Truly, one or two is plenty.
