This simple blueberry crisp recipe is a winner!
Have you ever been to a Blueberry Orchard and picked blueberries? It is easy and so much fun! For the most part you can stand up and just go along the rows picking the ripe, juicy berries. But, be sure to lean down once in a while to collect the ripe berries that are hiding near the bottom of the bush.
My husband and I picked blueberries earlier this week. I’m a huge blueberry fan. Him, well not so much…but he does eat them a little bit. They are high in antioxidants and oh so good for all of us.
Love of Blueberries
Years ago, I lived near a blueberry orchard in Virginia. I would go and pick them every year with my mom, my children, my friends – anyone I could talk into going.
Prior to that, when I was a teenager, we would visit family in Michigan and my Mom would make sure that we went at a time when we could pick blueberries there. We would bring a couple of coolers home full of the blueberries. I already told you that I am a big blueberry fan. It might be hereditary. One of my brothers loves to eat them frozen (he doesn’t like them fresh).
Now we live in Florida, so blueberry season is in right now, that’s much earlier than the early July season in Virginia.
Time to Try a New Recipe
Fresh berries of any kind are so nice to have. Whenever we get a chance to get fresh berries, I like to try at least one new recipe.
This time, with these super ripe blueberries, I decided to try a blueberry crisp. I am so glad I did, because it is absolutely wonderful! In fact, my husband, who I already mentioned is just so-so on these berries, is a fan of this recipe.
It’s a simple blueberry crisp with just basic ingredients that you are likely to have in your pantry already. I hope you give it a try and love it as much as we do.
Here’s the recipe for this simple and delicious dessert:
Simple Blueberry Crisp
Prep Time: 10 minutes Cook Time: 30 minutes Servings: 6
3 cups blueberries, rinsed
1 1/2 T. cornstarch
2/3 cup sugar
1 t. vanilla
For the topping:
1 cup all purpose flour
1/4 cup sugar
1/4 cup brown sugar
1/2 cup oats
1/2 cup chopped pecans
1/2 cup butter, softened (cut into small pieces works best)
Preheat oven to 350 degrees.
Combine blueberries, cornstarch, 2/3 cup sugar and vanilla. Set aside.
In a separate medium-sized bowl, combine flour, 1/4 cup sugar, brown sugar, oats, pecans and butter. Cut together with a pastry cutter or fork until the mixture resembles coarse crumbs.
Put the blueberry mixture in the bottom of a 7 x 11 (or 8 x 8) baking dish. Sprinkle the topping mixture all over the top of the blueberry layer.
Bake for 30 minutes or until topping is golden brown. Allow to sit for 15 minutes before serving.
Optional: Top with whipped cream or ice cream
