Do you love fresh tomatoes? fresh cucumbers? How about fresh sweet onions? We sure do. When they are all in season we like to take advantage of some super simple side dishes. This is one of our favorites.
This Simple Italian Salad has become a staple at our house during the tomato season. It is hard to find a side dish that we are willing to eat several times a week. This salad is so delicious, that we fix it as a side dish as often as possible. All of us look forward to it.
It is simple and oh so flavorful!
Give it a try and you may find it on your table over and over again also.
Here’s the recipe:
Simple Italian Salad
Ingredients
1 medium size tomato
1/2 cucumber
1/2 onion
Italian Salad dressing
Directions
Slice the tomato in half, and then in half again. Now, cut those sections into bite sized pieces.
Peel the cucumber and cut into chunky slices, then quarter the slices.
Chop the onion into bite-sized pieces (no need to cut them smaller)
Toss all of the ingredients into a bowl.
Pour some Italian salad dressing on them (usually 1/4 – 1/3 a cup will do, but if that’s not enough dressing, just add a little more).
Cover the bowl and GENTLY turn it upside down and all around a few times. Chill for 10 – 15 minutes.
Optional: Pour off any excess dressing before serving.
This makes enough for 2 – 4 people.
